Recipes
be sure to ask Franco his favorite sausages for to compliment this salad!
Couscous Salad
1 1/2c couscous
1/4c orange juice
1T Dijon mustard
1T chopped fresh thyme
1t orange rind
2c boiling water
1/2c chopped parsley
1/2c chopped green onions
1T lemon juice
1c diced English cucumber
1 bunch of radishes sliced
4T olive oil or more
In a large bowl stir together the first five ingredients.
Stir in boiling water and let stand for five minutes until the water is absorbed. Fluff with a fork and add the green onions and lemon juice. Chill. When the couscous is cool add the cucumber and radish and the olive oil. Season with salt and pepper and serve.
(Note): Other possible additions are: blanched peas, olives, pine nuts and mint
