In winter, hearty food of northern Italy warms the senses. As seasons change, menus lighten and follow a meandering southward path. Braised entrées give way to a greater emphasis on the grill, and back again, during this annual transition. The evolution is naturally endless, but it always leaves room to emphasize favorite dishes. They are making their own pasta, olives, Italian liqueurs, gelato, sorpressata, salumi, sausages sometimes using century old recipes. Santi uses produce and herbs from their own garden in back of the restaurant or from local growers and purveyors.
The team behind this artisan crafted fare Executive Chef Dino Bugica and Chef Emeritus Franco Dunn have extensive experience with Italian cuisine. They have hands-on experience in Italy at over 25 restaurants that geographically span the entire country, from rustic trattorias to three-star Michelin meccas of refined dining.
