Sean Dal Colletto, Wine Buyer/Bar Manager
Sean began his career in the restaurant industry in 1992 while a student at SRJC. His first job was at Mixx, where he learned the basics of fine dining service. He later was hired at Sonoma County cult favorite, Willowside Café, where the expansion of his knowledge of food and wine was nurtured under the tutelage of Chef Richard Allen, Wine Buyer Gregory Dolgushkin, and Willowside Owner, Mike Hale. In 2000, Sean joined the Santi family as lead bartender. From 2001-2003, Sean split his time between Santi and Manzanita restaurant.
Over the 7 years that he has worked at Santi, Sean has developed a loyal clientele who rely on his recommendations for wine pairings and libations. Sean’s ingenuity in creating delicious cocktails has garnered him the attention of several print and online publications such as the San Francisco Chronicle, Press Democrat’s “Savor Magazine”, Zagat Review, and slashfood.com. His wine list features a combination of Sonoma County and Italian selections, featuring lesser-known boutique gems from both countries. He favors well-balanced wines that complement Santi’s rustic Italian fare.
